Despite the name, this is actually a green tea. Its name comes from the fact that the leaves are picked just when their color starts to transition. Once the temperature starts to get above 30 degrees Celsius, the leaves begin to change from a lighter yellow-white to green. It is at this point that the tea is picked. Thus, the center of the leaves tends to be green, while the outer edges, which have yet to transition, retain their lighter coloration. This region is surrounded by bamboo forests that stretch as far as the eye can see, which lend their flavor to this tea. Its flavor is crisp, light, delicate, verdant, and pure, and vegetal.  While it is a relatively light and delicate green, its flavor is still deeper, more forest-like, and more buttery than its lighter cousins, Anji Golden Leaf and Anji Golden Sprout. This tea is grown at high elevation, in clean air, without pesticides.
